Abstract

This action research aimed to develop nutritional knowledge and promote age-appropriate dietary behaviors among Grade 7 students using active cooperative learning activities. The study was conducted during the second semester of the 2025 academic year. The target group consisted of 15 Grade 7 students from Rongkham Wittayanukul School, obtained through purposive sampling. The research instruments included 12 active cooperative learning lesson plans, a nutritional knowledge test, and a dietary behavior questionnaire. The research was implemented through a three-cycle action research process, with each cycle comprising four essential stages based on the PAOR framework: Planning, Action, Observation, and Reflection, to ensure continuous behavioral development. Data were analyzed using descriptive statistics (mean and standard deviation), the dependent t-test (paired-sample t-test), and effect size analysis (Cohen’s d). The results indicated that students’ nutritional knowledge scores increased significantly at the .05 level across all cycles. The mean score rose from 7.20 (SD = 2.95) in Cycle 1 to 12.60 (SD = 1.70) in Cycle 3. The effect sizes ranged from moderate to large (d = 0.76–1.65), demonstrating the practical significance of the learning activities. Furthermore, dietary behavior development showed a positive trend consistent with the knowledge gains. Qualitative findings revealed that students exhibited more appropriate dietary behaviors, including an improved ability to analyze nutritional information, make rational food choices, and effectively apply their knowledge to daily life. In conclusion, integrating active cooperative learning with the action research process is an effective approach for the sustainable development of both health knowledge and dietary behaviors among learners.
